Gülşehir Joya escondida
A quiet Cappadocian town where fairy chimneys give way to real life — bakeries, tea gardens, farmers selling apricots by the road. Its hidden gem is the Açıksaray rock-cut monastery complex and the frescoed Karşı Kilise (St. John's Church), carved straight into the soft volcanic stone. Far fewer buses stop here than in Göreme, so you often get the caves to yourself.
