Manila

In almost any tropical city, the heat peak and the rain peak arrive together. In Manila they are four months apart: April is the hottest month and also one of the driest of the year, while August gets twenty times more rain at three degrees cooler. Understanding that gap is understanding when to go.

In October 2025 the Michelin guide finally reached the Philippines and handed out 108 distinctions. Not one went to Binondo, the world's oldest Chinatown. For a traveler on a tight budget, that is not a problem: it is precisely why you can still eat extraordinarily well here for very little.

Binondo was founded in 1594, and its layout is no accident: it was placed directly across the river from the walled city, within cannon range and in plain sight. Four centuries on, that administrative decision still explains why the district sits where it sits and why it walks the way it walks.
